    Pineapple Cookies w/Frosting

    List of Ingredients




    1 cup margarine
    1 cup white sugar
    1 cup brown sugar
    2 eggs
    1 20 oz. can of crushed pineapple, drained (reserve juice)
    1 tsp. vanilla
    4 cups flour
    1 tsp. baking powder
    1 cup chopped nuts (optional)

    ICING:
    1 stick of margarine
    powdered sugar
    Juice from Pineapple

    Recipe



    Cream together margarine & sugars; add eggs & pineapple, vanilla, flour, baking powder & nuts.

    Mix together and drop by teaspoons on cookie sheet.

    Bake at 350 degrees for 8 - 10 minutes. (I usually just keep checking on the cookies and when they are pretty set I take them out)

    ICING:
    Cream margarine, sugar and juice together until you are happy with the spreading consistancy. If too thin, add more sugar. If too thick, add more juice.
    Frost cookies and enjoy.

    This recipe makes about 60 cookies.
