    4 Spartan or other cooking apples about 1-3/4 lb peeled, cored and thickly sliced
    1-1/4 cups brown sugar
    1 tbsp ground cinnamon
    3/4 cup melted butter
    2 tbsp Realemon lemon juice or fresh lemon juice

    Batter:
    1 cup all purpose flour
    1 cup whole wheat flour
    2 tbsp brown sugar
    1 tbsp baking powder
    1/2 cup cold cubed butter
    2 eggs
    1/2 cup milk
    1 cup shredded Canadian Cheddar Cheese (optional)

    Butter a 9-inch square or 7 x 11-inch (1.5 L) baking dish. Preheat oven to 350°F

    Toss apples with brown sugar, cinnamon, butter and lemon juice.

    Batter:
    Combine flours, brown sugar and baking powder in a food processor. Add butter and pulse until mixture resembles oatmeal. Whisk eggs with milk and, with motor running, add to flour mixture. Mix just until combined.

    Drop half the batter by spoonfuls into the prepared dish. Spoon in apples. Drop dollops of remaining batter over the apples. Bake for 40 minutes or until apples are tender and topping is bubbly. Immediately sprinkle with Canadian Cheddar Cheese, if using.

    Serve warm.
