    Chocolate Covered Cream Cheese

    Recipe Introduction

    What about mixing the cream cheese with powdered sugar and cool whip, refrigerating until solid, then rolling into balls. Freeze balls solid and then dip in chocolate. Store in fridge. You could probably add different items to the cheesecake mixture, too: mini m&m's mini choc. chips toffee pieces chopped nuts crushed nut brittle crushed cookies peppermint pieces candied orange peel chopped, drained maraschino cherries dried fruit almond extract crushed espresso beans Also, how about dipping the cheesecake centers into caramel first, and then chocolate?

    List of Ingredients

    2 pounds cream cheese
    1, 12 ounce package milk chocolate chips
    2 tablespoons vegetable shortening or paraffin wax

    Recipe

    Line a baking sheet with wax paper. Cut cream cheese into equal pieces. Place them on a baking sheet, cover, and refrigerate overnight.

    Melt the chocolate chips and shortening over low heat, stirring constantly. Remove from the heat. Hold each piece over pan in a slotted spoon and spoon the chocolate over the piece, coating completely and allowing the excess chocolate to drip back into the saucepan. Return to the baking sheet; refrigerate for 2 hours, or until the chocolate and cream cheese are solid. Keep refrigerated until ready to eat.
