    Roasted Garlic Dip

    2 heads garlic
    2 teaspoons olive oil
    8 ounces cream cheese, softened
    4 ounces goat cheese
    1/3 cup Parmesan cheese, freshly grated
    2 tablespoons milk
    salt and pepper, to taste

    Slice the top off the garlic bulbs to reveal the cloves. Drizzle with olive oil and wrap in aluminum foil. Bake at 400 degrees for 45 minutes. Cool and remove garlic cloves from their skins by gently squeezing them out.

    Mash the garlic with a fork and combine with the remaining ingredients, mixing well and adding enough milk (can add up to an extra tablespoon if necessary) to give it a nice texture. Serve with raw vegetables, crackers, breadsticks or pita bread.
