    Chicken Filled Biscuit Dumplings

    Sauce:
    2 tablespoon butter
    2 tablespoons minced onion
    2 tablespoons minced green pepper
    2 tablespoons flour
    2 cups chicken broth
    1/3 cup half & half (or cream)

    Dumplings:
    1 1/2 cups diced, cooked chicken
    1/4 cup chopped celery
    2 tablespoons chopped onion
    1 teaspoon parsley
    8 oz. refrigerator biscuits or frozen biscuits; thawed

    Recipe



    Melt butter in a large saucepan over medium heat. Add onion and green pepper sautéing until tender. Stir in flour until smooth and simmer for 1 minute while stirring. Gradually add broth and half & half and continue to stir until mixture boils and thickens. Taste and adjust with salt and pepper. Prepare dumplings: Combine all ingredients except biscuits. Separate biscuits and pat each into a 4-inch circle. Place ¼ cup chicken mixture on each circle. Wrap dough around mixture, seal edges. Place sealed edges down in soup; spoon soup over them. Cover tightly and cook over medium heat 15 to 20 minutes, turn off heat, let steam covered until no longer doughy.
