Romaine greens tossed in Cobb dressing
1/2 cup diced tomatoes
Bleu cheese crumbles
1/2 cup hard boiled eggs, chopped
1/2 cup bacon bits
3 cooked scallops
2.5 ounces bay shrimp
2.5 ounces crab meat
1/2 avocado
Recipe
Spread the greens onto a serving plate. Arrange the tomatoes, bleu cheese, bacon bits, and chopped egg in strips across the bed of greens, with the scallops placed in a row in the very center. The shrimp and crabmeat are set at opposite ends of the plate. Center the avocado half in the center of the salad and serve.
Cobb Dressing
Ingredients:
8 ounces of your favorite Caesar dressing
8 ounces of your favorite bleu cheese dressing
2 ounces red wine vinaigrette
Method:
Mix all ingredients together. Store remaining dressing in a tightly sealed container in the refrigerator for future use.
