Bran-Peach Muffins

1-1/2 cups bran cereal shreds
1 cup 1% milk
1 egg, beaten
1/4 cup vegetable oil
1 cup all purpose flour
1/4 cup sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. lemon zest
1/4 tsp. salt
1 cup canned peaches, drained and chopped
Recipe
Preheat oven to 400°F. Combine bran cereal and milk in a bowl; let soak until liquid is absorbed. Stir in egg and oil. In another bowl combine remaining ingredients except for peaches. Add bran mixture to flour, stirring until moistened; batter will be thick. Fold in peaches. Fill greased (or paper-lined) muffin cups to about 2/3 full. Bake at 400°F for 20-25 minutes.
