    3/4 cup plus 1 Tbs. all purpose flour
    3 Tbs. brown sugar
    1 Tbs. pecans, finely chopped
    1/2 tsp. unsalted butter, softened
    1/2 tsp. baking powder
    1/4 tsp. salt necessary
    1/8 tsp. baking soda
    1/2 tsp. ground cinnamon
    1/8 tsp. nutmeg
    1/8 tsp. ground ginger
    1/2 cup buttermilk
    1 Tbs. vegetable oil
    1 small egg white
    nonstick cooking spray
    1/2 cup apple butter

    Preheat oven to 400°F. Combine 1 Tbs. flour, 1 Tbs. brown sugar, pecans and butter in a mixing bowl. Mix thoroughly and set aside. Sift together remaining flour and brown sugar, along with next 6 ingredients in a mixing bowl. Combine buttermilk, oil and egg white in another bowl and mix thoroughly. Stir into dry ingredients until just moistened. Divide batter among 6 muffin tins that have been sprayed with nonstick cooking spray. Spread pecan mixture evenly over muffins. Bake 18-20 minutes or until a tester comes out clean when inserted in center. Remove muffins immediately from muffin tins to cool on a wire rack. Serve muffins with apple butter.

    This recipe serves 6 people.
