Peach Popover Pancakes

1/4 cup butter, softened
1 pound peaches, plums or nectarines, pitted and cut into thick slices (about 2 cups)
3/4 cup granulated sugar, divided
1 1/4 cups all-purpose flour
1 1/4 cups low-fat or nonfat milk
2 eggs or 1/2 cup egg substitute
2 teaspoons baking powder

Preheat the oven to 375 degrees F.
Put the butter into a deep 2- to 3-quart casserole dish and place in the oven. Toss the sliced peaches in a bowl with 1/4 cup of the sugar.
Place the remaining 1/2 cup sugar and the flour, milk, eggs and baking powder in a blender and liquefy. Alternatively, place in a medium bowl and work with an electric beater until the batter is smooth.
When the butter has melted to the sizzling point, 3 to 5 minutes, remove the hot dish from the oven. Immediately pour the batter into the dish and spoon the sugar, fruit and juice on top.
Return to the oven and bake for 50 minutes, or until the pancake has risen and is golden brown. Serve warm.
