    Ziti with Garlic and Tomato No-Cook Sauc

    List of Ingredients




    8 ounces ziti pasta
    2 cloves garlic
    2 tablespoons extra-virgin olive oil
    1/2 teaspoon dried Italian seasoning
    4 Roma tomatoes
    2 tablespoons chopped black olives (see Cook's Note)
    1/4 cup already-shredded Parmesan cheese
    salt and black pepper to taste

    Recipe



    1. Place the pasta in 2 1/2 quarts of already-boiling unsalted water and cook 11 to 13 minutes.

    2. Meanwhile, peel and finely chop the garlic and place it in a 4-quart or larger bowl. Add the olive oil and Italian seasoning. Chop the tomatoes (unpeeled) into bite-size pieces and add them to the bowl. Stir to coat the tomatoes with oil. Drain the olives and add them to the bowl.

    3. Drain the pasta in a colander, shaking it to remove as much water as possible. Add the pasta to the bowl with the tomato mixture. Pour the cheese on top and toss with the pasta until the cheese is melted. Season with salt and pepper to taste. Serve at once.

    Serves 4

    Cook's Note: Buy black olives already chopped if you can find them. Otherwise buy sliced and chop them finely. Refrigerate the leftover chopped olives in an airtight container and sprinkle them over salad later in the week.
