    Crust
    3 cups flour
    1 teaspoon salt
    1 egg
    6 tablespoons water
    2 teaspoons apple juice
    1½ cups shortening

    Mix the flour, shortening, and salt until crumbly. Add the beaten eggs to the water and apple juice mix flour mixture.

    Pie Filling
    ½ cup brown sugar
    ½ cup apple juice
    2 tablespoons butter
    2 tablespoons corn starch
    ¼ teaspoon salt
    4 cups sliced apples- PA Granny Smith
    2 teaspoons lemon juice
    1 pastry shell-baked
    1 egg
    2/3 cups evaporated milk
    ½ cup sugar
    ½ cup coconut
    1 teaspoon cinnamon

    In saucepan bring brown sugar, apple juice, butter, cornstarch, and salt to a boil. Stir in apples and lemon juice. Cook until apples are tender. In small bowl beat egg, milk, sugar, coconut, vanilla, and cinnamon. Bake at 350o for 40-45 minutes.

    Pecan Cream Topping
    1 package 8 ounce cream cheese
    ½ cup sugar
    ¾ cup chopped pecans
    1 teaspoon vanilla
    1 carton whipped topping

    Beat the cream cheese and sugar in a bowl. Stir in pecans and vanilla. Fold in whipped topping.
