    HERB CHICKEN

    List of Ingredients




    3 pounds chicken breasts
    8 ounces low-fat cream cheese
    2 tablespoons chives, chopped fine
    2 tablespoons fresh parsley, chopped fine
    3 garlic cloves, minced
    Salt and pepper
    Half a lemon
    1/2 cup cholesterol free margarine, melted
    1 cup soft bread crumbs

    Recipe



    Remove skin and visible fat from chicken; discard. Preheat oven to 350ºF. Whip the cream cheese until soft; add chives, parsley and garlic. Beat well. Lay half of the chicken in a square roasting pan, bone side down. Sprinkle with salt and pepper. Spread cream cheese mixture over top. Sprinkle with lemon juice. Cover with remaining chicken. Brush with half the melted margarine. Press on bread crumbs. Drizzle on remaining margarine. Bake 30 minutes, or until juices run clear.
