    ROAST GARLIC CHICKEN

    List of Ingredients




    3 lb chicken pieces (I used breasts w/bone and drumsticks)
    2 T olive oil
    2 T butter
    50 peeled garlic cloves (yes that's 50 not 5)
    1/4 c water
    2 t lemon juice
    1 t ground thyme
    1 t salt
    1/2 t freshly ground black pepper

    Recipe



    Heat oil and butter in heavy skillet. Brown chicken on all sides and place in large baking pan (13 x 9 or a small roaster pan). Add garlic cloves to skilet and stir around to coat with oil. Place garlic cloves in pan with chicken. Add water to skillet and stir to release all browned bits in pan. Pour over chicken and garlic. Sprinkle chicken with lemon juice and seasonings. Cover tightly with foil or a lid and cook at 375° for approximately 50 minutes.

    Remove chicken to serving platter and keep warm. Reserve 10-15 cloves of garlic for the stuffed potato recipe (if desired). Place remaining garlic in food processer or blender. Pour 2-3 tablespoons of the juice from the roaster pan on the garlic and process until smooth. This makes a nice sauce or gravy depending on how much liquid is used. The sauce/gravy may be spread on the chicken or used to dip bread into (we did both!)
