    SALAD:Chicken Orzo Salad

    List of Ingredients

    3/4 cup blanched almonds -- sliced
    1 chicken breast
    1 3/4 cups chicken stock
    2 cups orzo -- cooked
    6 tablespoons olive oil
    2 tablespoons red wine vinegar
    2 tablespoons lemon juice
    1 dash tabasco sauce
    3 tablespoons chives
    salt and pepper
    1 tablespoon red onion -- minced
    spinach leaves
    orange sections
    parsley

    Recipe

    Toast almonds at 450 for 5 minutes; let cool. In a covered pot, simmer chicken breast in stock to cover for 15 minutes; let cool in liquid. Cut cooled chicken into bite-sized pieces. Cook and drain orzo according to package ditrerctions. While pasta is still warm; toss with oil, vinegar, lemon juice, tabasco, parsley, chives, salt, and pepper. Add chicken, onion, and almonds. Toss well and spoon onto a platter. Surround with spinach leaves and orange sections. Refrigerate till serving or serve at room temperature.
