    SALAD:Country Salad

    List of Ingredients

    2-3 ripe tomatoes, cut into wedges
    1 large cucumber, partially peeled and thinly sliced
    1/2 medium onion, thinly sliced
    1 cup (250 ml) crumbled feta cheese
    Kalamata or oil-cured black olives to taste
    1 tsp (5 ml) chopped fresh oregano leaves
    (do not substitute dried oregano), optional
    Salt and freshly ground pepper to taste
    Extra-virgin olive oil (preferably from Greece) to taste

    Recipe

    Arrange the vegetables on a platter or individual serving plates and sprinkle with the feta. Add the olives and oregano, season with salt and pepper, and drizzle liberally with olive oil. Serve at room temperature.

    Serves 4 to 6.
