    1 large egg
    3 Tbs. plus 1 tsp. mayonnaise
    1/8 tsp. dry mustard
    5 ounces canned tuna, drained
    1/4 cup celery, chopped
    1/4 tsp. onion flakes
    4 English muffins, sliced in half
    2 ounces cheddar cheese, grated

    Recipe



    Place eggs in saucepan and cover with water. Bring water to a boil, reduce heat, and simmer for 10 minutes. Drain, rinse in cold water, and chill in the refrigerator. When chilled, peel and finely chop.

    Preheat oven to 350°F. In a large bowl, combine the mayonnaise and mustard. Add the egg, tuna, celery, and onion flakes. Place halved English muffins on a baking pan. Top with mixture, dividing equally, then top with cheese and other muffin halves. Bake for 5 minutes, or until cheese melts.
