    Honey-Mustard Glazed Salmon

    Serves:6

    1/4 cup Dijon mustard
    1/2 tbsp. light soy sauce
    1/8 cup honey
    1/8 tsp. cracked caraway seeds
    1/2 tbsp. cracked mustard seeds
    juice and zest of 1 lemon
    1 shallots, chopped
    1/8 cup olive oil
    6 4-ounce salmon fillets, all bones and skin removed
    1 tbsp. minced shallots
    1/8 cup butter
    1/2 cup dry white wine
    1 cup orange juice
    juice of 2 lemons
    1/4 cup Dijon mustard
    1/8 cup honey
    6 orange sections
    zest of 2 oranges, blanched

    Recipe



    Thoroughly combine first eight ingredients. Coat each fillet with marinade; cover and refrigerate for 1 hour.
    In a very hot heavy skillet, sear fillets, two or three at a time, on both sides, until slightly browned. Transfer to a baking sheet. Bake at 350° F for 5 to 7 minutes, basting 3 or 4 times with remaining marinade.

    For sauce, sweat shallots in butter. Deglaze pan with white wine; reduce liquid to syrup consistency. Add orange and lemon juices; reduce to half. Whisk in mustard and honey to form an emulsion.

    Serve salmon and sauce with Dijon mashed potatoes and braised mustard greens.
