    List of Ingredients




    1 1/3 pound (4 medium) potatoes
    4 scallions (green onions) sliced
    4 skenless, boneless chicken breast halves, about 4-oz each
    salt and pepper to taste
    2 gralic cloves, minced
    2/3 cup dry white wine or chicken broth
    1 tablespoon Dijon-style mustard
    2 teaspoon chopped fresh taragon or 1/2 teaspoon dried tarragon leaves
    1/4 cup light sour cream

    Recipe



    Pierce potaotes several times with fork; microwave on high for 10 minutes. Cut into 1/2' cubes.

    Spray 12" nonstick skillet with nonstick cooking spray. Add potaotes and scallions; cook over medium heat, tossing occasionally and adding more spray to keep mixture from sticking, umtil lightly browned, about 10 minutes.

    Push potatoes to one side of skillet to allow room for chicken; add chicken, cook, turning occasionally, until potatoes are tender and chicken juices run clear, about 15 minutes. Season with salt and pepper, transfer to platter, keep warm.

    Add garlic to skillet, cook stirring, 1 minute. Add wine, mustard and tarragon; cook until reduced by half.

    Remove from heat; whisk in sour cream. Season with additional salt and pepper if necessary. Pour over chicken and potatoes; toss lightly.
