    2.0 cup King Arthur Unbleached All-Purpose flour
    0.33 cup vegetable oil
    1.0 firmly packed, shredded cup zucchini
    0.5 cup sugar
    1.0 tbsp baking powder
    1.0 tsp salt
    lemon peel
    0.5 chopped cup walnuts
    0.5 cup raisins
    2.0 beaten egg
    0.5 cup milk

    Recipe



    1. Preheat oven to 400°F.
    2. Combine the flour, sugar, baking powder, salt and the grated peel from half a lemon in a large bowl.
    3. Stir in the walnuts and raisins.
    4. In a smaller bowl (or a two cup liquid measure), combine the eggs, milk and oil.
    5. Make a well in the center of the dry ingredients and add the wet ingredients.
    6. Stir just until barely combined and then gently fold in the zucchini.
    7. Spoon the battter into a greased, 12 cup muffin tin.
    8. Bake for 20 to 25 minutes or until the muffins spring back when you press them with your fingertips.
    9. TIP: More or less walnuts and raisins may be added to suit your preference.
