Herbed Zucchini

1-1/4 tsp. unsalted butter
1 lb. zucchini, cut into 1/2 inch slices
2 Tbs. water
1/8 tsp. thyme, or 1 tsp. fresh, chopped
1/8 tsp. salt optional, or to taste
2 tsp. parsley, chopped
Recipe
Melt butter in a heavy nonstick skillet over medium heat. Sauté zucchini 2-3 minutes. Add water and thyme. Cover skillet and simmer 4-5 minutes or until liquid has evaporated and zucchini is tender. Season to taste with salt and pepper. Toss with parsley before serving.
