Raisin Zucchini Muffins

3/4 cup nonfat milk
1/2 cup brown sugar, packed
1/3 cup vegetable oil
1 egg
1-1/2 cups shredded zucchini
2 tablespoons grated orange peel
2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon each: salt, cinnamon, ginger, nutmeg
1/8 teaspoon ground cloves
1 cup DOLE® Seedless Raisins
1/2 cup chopped almonds, toasted
Recipe
• Beat milk, brown sugar, oil and egg in large bowl. Stir in zucchini and orange peel.
• Combine flour, baking powder, salt, spices, raisins and almonds in medium bowl. Stir into zucchini mixture just until moistened.
• Spoon into 12 muffin cups sprayed with vegetable cooking spray. Bake at 375°F 25 minutes. Serve warm.
