    This tastes just like apple pie!


    List of Ingredients




    8 cups peeled and sliced zucchini (slice like apples, removing all seeds)
    1 1/2 cups granulated sugar
    1/2 cup all-purpose flour
    1/2 cup (1 stick) butter
    1/4 teaspoon nutmeg
    1 1/2 teaspoons cinnamon
    2/3 cup fresh lemon juice
    Double 9-inch pie crusts

    Recipe



    Mix all ingredients except pie crusts together and simmer for 30 minutes.

    Fill crust with zucchini filling. Top with remaining crust. Seal the edges together by pinching with your thumb and index finger. Cut a large "Z" on top to allow steam to escape.

    Bake pie at 400 degrees F for 50 to 60 minutes, or until crust is nicely browned.

    *Tip: If using a homemade crust, loosely roll up crust onto floured rolling pin, then unroll into pie pan.
