    Clam Pie

    This is good cold,the next day.


    List of Ingredients


    • 2 9" pie crusts
    • 2 tbs. saltine cracker crumbs
    • 2 cans minced clams,7 or 8 oz. cans
    • 1/2 cup milk
    • 2 tbs. butter
    • 1/2 cup diced onion
    • 1/4 cup flour
    • 2 cups cooked potato,cubed
    • salt to taste
    • 1/4 tsp. pepper
    • 1/4 tsp. whole thyme leaves


    Instructions


    1. Prepare pie crust.Fit one crust into a 9" deep pie pan.Sprinkle the cracker crumbs over the bottom.
    2. Drain clams,reserving one cup of liquid.Add the milk to the clam juice.Melt butter and saute the onions,until soft.Stir in the flour and spices.Cook and stir constantly for a few minutes.Gradually stir in the liquid,and cook and stir until thickened.
    3. Add potatos and clams.Mix, and pour into shell.Fit the top crust,fold and seal edges.Cut a couple of steam vents into the top,and bake at 375 degrees for 40 minutes.Let stand 15 minutes before slicing.
