    Vanilla Holiday Eggnog

    Makes 10 servings
    Prep time: 15 minutes
    Cook time: 10 minutes

    Ingredients:

    7 cups reduced fat milk
    1 cup sugar
    1 cup refrigerated or frozen egg product, thawed
    2 teaspoon vanilla
    1/4 teaspoon rum extract (optional)
    1 pint vanilla lowfat frozen yogurt, softened
    ground nutmeg

    Recipe

    In a 4 quart Dutch oven, combine 4 cups of the milk, sugar and egg product. Cook and stir over medium heat approximately 10 to 15 minutes until mixture coats a metal spoon. Remove from heat. Stir in remaining 3 cups of milk, vanilla and rum extract, if desired. Cover and chill 4 to 24 hours.

    To serve, place softened frozen yogurt in a punch bowl. Gradually whisk in chilled milk mixture until smooth. Sprinkle with nutmeg.
