Pancakes: Banana Cinnamon Pancakes

- 1 cup all-purpose flour
- 1 1/4 teaspoons baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1 cup milk
- 1/4 cup dark brown sugar
- 2 tablespoons vegetable oil
- 1 egg
- 1 teaspoon vanilla extract
- 2 to 3 bananas, peeled and mashed
- Butter Run Sauce:
- 3/4 cup maple syrup
- 2 tablespoons butter
- 2 tablespoons dark rum
Instructions
- Combine the dry ingredients in a mixing bowl.
- In a seperate bowl, mix together the milk, sugar oil and vanilla. Add to the dry ingredients and mix until almost smooth. Add the bananas, stirring to combine and allow the batter to rest for 30 minutes.
- For each pancake, pour about 1/4 cup the batter onto a lightly greased nonstick skillet over moderate heat. Cook until small bubbles form on the surface, about 1 minute. Turn the pancakes and cook an additional 30 to 45 seconds, until golden brown.
- Serve with butter rum sauce.
- Butter Rum Sauce: Combine all sauce ingredients in a small saucepan and heat over moderate heat until butter has melted.
