- 1 medium zucchini sliced
- 1/4 pound mushrooms sliced
- 1 bunch green onions sliced
- 1 (4 ounce) carton eggbeaters
- 1/2 cup fat free cottage cheese
- tortillas (optional)
Instructions
- Saute mushrooms and zucchini in a nonstick skillet, add green onion and heat through.
- Pour in eggs and cook until nearly set.
- Add the cottage cheese and heat through, mixing well.
