    Biscuits: Buttery Biscuits

    List of Ingredients


    • 1 cup all-purpose flour
    • 1 1/2 teaspoons baking powder
    • 1 1/2 teaspoons sugar
    • 1/4 teaspoon cream of tartar
    • 1/8 teaspoon salt
    • 1/4 cup butter or margarine
    • 1/3 cup milk, half and half or light cream


    Instructions


    1. In a medium mixing bowl, stir together the flour, baking powder, sugar, cream of tartar and salt.

    2. Using a pastry blender, cut in the butter or margarine until the mixture resembles coarse crumbs.

    3. Make a well in the center of the dry ingredients, then add the half and half, light cream or milk all at once. Using a fork, stir just until moistened.

    4. Turn the dough out onto a lightly floured surface. Quickly knead the dough by gently folding and pressing the dough for 10 or 12 strokes or until the dough is nearly smooth.

    5. Pat or lightly roll the dough to 1/2" thickness. Cut dough with a floured 2 1/2" biscuit cutter, dipping the cutter in flour between cuts. Place biscuits on an ungreased baking sheet.

    6. Bake in a 450 degree oven for 10 to 12 minutes or until the biscuits are golden brown.

    7. Remove biscuits from baking sheet and serve hot.

    8. Makes 5 to 6 biscuits

    9. Jam Filled Biscuits: Prepare basic buttery biscuits as above, except make an indention in the center of each biscuit with your thumb. Spoon 1 teaspoon apricot, strawberry or cherry jam or preserves (2 tablespoons total) into each indention. Bake as directed.
