Eggs: Cheesy Skillet Eggs

- 2 cups refrigerated egg substitute
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 1 medium yellow onion, chopped (about 1 cup)
- 1 medium green bell pepper, chopped (about 1 cup)
- 1 clove garlic, minced
- 1 medium tomato, seeded and diced (about 1 cup)
- 1/4 cup shredded jarlsberg cheese
Instructions
- Preheat broiler. Spray a large ovenproof nonstick skillet with vegetable cooking spray. Heat skillet over medium heat. In a medium bowl, combine egg substitute, salt, and black pepper. Mix well.
- Add onion and bell pepper to skillet. Cook, stirring frequently, until vegetables are tender, about 8 minutes. Add garlic. Cook, stirring occasionally, for 1 minute longer.
- Pour egg mixture into skillet. Stir in tomato. Cook over medium heat, stirring constantly, until eggs are just set, about 4 minutes. Remove from heat. Sprinkle with cheese.
- Broil 4 inches from heat until eggs are firm, about 3 minutes. Serve immediately.
