    Biscuits: Chocolate Gravy And Sour Cream Biscuits

    List of Ingredients


    • Sour Cream Biscuits:
    • 1 1/3 cups self-rising flour
    • 1/2 teaspoon baking soda
    • 1 teaspoon baking powder
    • 1 teaspoon sugar (optional)
    • 1 (8 ounce) container sour cream
    • Chocolate Gravy:
    • 1 cup sugar
    • 3 heaping tablespoons flour
    • 2 heaping tablespoons cocoa (can use 3 tablespoons cocoa for a more powerful chocolate taste)
    • 2 1/4 cups milk (approximately)
    • 1 teaspoon vanilla
    • 1/4 cup butter (can cut this down as far as 1 tablespoon if desired)


    Instructions


    1. Sour Cream Biscuits: Combine dry ingredients well; blend in sour cream and stir to create a smooth dough (I do this in the food processor, actually).

    2. Pat out dough on a floured board or flour sacking towel sprinkled with flour and fold over onto itself three or four times, sprinkling with a little flour when needed.

    3. Gently roll out to 1/2 to 3/4 inch thickness and cut into desired shapes with floured cutter. Don't twist cutter, and be sure the cutter is floured after each cut, because the cutting will affect how your biscuits rise while baking and you don't want lopsided biscuits, and, when cut right, these little guys will rise like crazy. Place on greased baking sheet.

    4. Bake at 450 degrees for 10 to 12 minutes, until golden brown.

    5. Makes approximately 12 biscuits.

    6. Serve hot.

    7. Chocolate Gravy: Combine sugar, flour and cocoa powder in a medium saucepan.

    8. Blend in milk and cook over medium heat, stirring constantly until thickened and bubbly (like making pudding or cream pie filling). Should be just slightly thinner than pudding. Add just a little more milk if needed. Add butter and vanilla when gravy has thickened, and blend well.

    9. Serve over hot biscuits and enjoy bliss. Can also be served over cake, ice cream, or even layered with graham crackers for an interesting dessert.
