    Doughnuts: French Beignets

    List of Ingredients


    • 1 cup all-purpose flour
    • 1 tablespoon sugar
    • 1/2 teaspoon salt
    • 1 cup water
    • 1/2 cup butter
    • 5 large eggs
    • 1 teaspoon lemon zest
    • Powdered sugar (as needed)
    • 1/2 to 1 cup jam or jelly, melted
    • Oil, for deep frying (amount needed may vary)


    Instructions


    1. Mix together flour, sugar, and salt.

    2. Heat water and butter to a boil in a small saucepan. Add the flour mixture all at once and stir until it comes into a ball.

    3. Remove pan from heat, and add eggs one at a time, allowing each to incorporate before adding another. Stir in lemon zest.

    4. Heat oil in a deep fryer and add batter 1 teaspoonful at a time, cooking for 5 to 7 minutes, and turning over halfway through cooking, until nicely golden.

    5. Drain on paper toweling, and after they have cooled a few moments, you may sift powdered sugar over them and serve with melted jam (as a dipping sauce).
