    • 2 eggs, separated
    • 1 tablespoon sugar
    • 3/4 teaspoon salt
    • 1 cup sifted flour
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1 cup milk
    • 1/3 cup sour cream
    • 4 tablespoons butter, melted


    Instructions


    1. Add sugar and salt to well beaten egg yolks. Add baking powder and baking soda to flour. Add flour mixture and milk to egg mixture, alternately a bit at a time until all are added. Add sour cream and melted butter and blend well. Beat egg whites until stiff and gently fold into egg mixture. Bake on hot griddle (I use Pam spray) and turn only once when bubbles on surface break.
    2. Freshly made bluberry sauce/syrup goes well with the pancakes.
