    Pancakes: Pina Colada Pancakes

    List of Ingredients


    • Pancakes:
    • 1 cup reduced fat bisquick
    • 1 egg
    • 1/4 cup sugar
    • 1/2 cup water
    • 1 tablespoon coconut extract flavoring
    • Topping:
    • 1 (8 ounce) can crushed pineapple in syrup, undrained
    • 2 tablespoons cornstarch
    • 1/4 cup cold water
    • 1 tablespoon coconut extract flavoring
    • 1 teaspoon rum extract flavoring
    • 1/4 cup flaked coconut, divided


    Instructions


    1. For Pancakes: Preheat griddle.

    2. Combine all ingredients.

    3. Drop batter by tablespoonfuls to make pancakes that are 2 1/2" in diameter.

    4. Cook until bubbles appear all over top.

    5. Turn carefully and cook until done.

    6. Remove to a platter.

    7. Makes 20 2 1/2" pancakes.

    8. For Sauce: Put pineapple in a small saucepan.

    9. Heat over medium heat until bubbling slightly, stirring occasionally.

    10. Combine cornstarch with cold water.

    11. Stir into hot pineapple, stirring constantly, until mixture is thickened.

    12. Remove from heat.

    13. Stir in coconut extract and rum extract.

    14. To serve: Place 5 pancakes on each serving plate. Top each serving with 1/4 cup of the sauce. Sprinkle 1 tablespoon Coconut over each serving.
