    Eggs: Salsa Veggie Scramble

    List of Ingredients


    • 2 cups eggbeaters
    • 1 cup low fat cottage cheese
    • 1 cup chopped green pepper
    • 1/2 cup chopped onion
    • 1/2 cup reduced fat mild cheddar cheese
    • 1/2 cup Taco Bell Home Originals Thick N' Chunky Salsa


    Instructions


    1. Beat eggbeaters and cottage cheese in a small bowl with wire whisk until well blended.

    2. Spray medium nonstick skllet with cooking spray.

    3. Add green pepper and onion; cook on medium high heat 2 to 4 minutes or until tender, stirring occasionally.

    4. Add eggbeaters mixture and cheddar cheese.

    5. Reduce heat to medium.

    6. Cook 8 to 10 minutes or until set, stirring frequently.

    7. Serve topped with salsa.

    8. Makes 4 servings.
