Eggs: Strawberry Pancake

List of Ingredients



• 2 tablespoons butter or margarine
  
• 4 eggs
  
• 1 cup milk
  
• 1 cup flour
  
• 2 tablespoons sugar
  
• 1/2 teaspoon vanilla
  
• 1 pint strawberries, hulled and quartered
  
• 1 tablespoon confectioners' sugar
  






Instructions



1. Preheat oven to 425 degrees.
   
   
2. Melt 1 tablespoon of butter in each of 2 9" pie plates in oven.
   
   
3. Beat eggs with milk, flour, sugar and vanilla.
   
   
4. Remove pie plates and pour half of the batter into each plate; scatter with berries.
   
   
5. Bake 20 minutes or until golden.
   
   
6. Sprinkle with confectioners' sugar.
   
   
7. Makes 4 servings.
