    Fried Pies: Fried Strawberry Pies

    • 2 cups fresh strawberries, mashed
    • 3/4 cup sugar
    • 1/4 cup cornstarch
    • 1 package pie crust (dairy case)
    • Vegetable oil
    • Powdered sugar


    Instructions


    1. Combine first 3 ingredients in saucepan and bring to a boil. Remove from heat stirring constantly, about 1 minute or until thickened. Cool completely.

    2. Remove piecrust and unroll or unfold. Roll out pie crust to press out the fold lines. Using at least a 3 inch cutter, (I used a large glass on the show) cut out circles and place 1 teaspoon of strawberry filling per circle. (Careful not to over fill) Fold over and press down edges using a fork to seal. Repeat using both crust and single layering on baking sheet. You will have about 18 pies. Freeze at least 1 hour. (Pies can be frozen until you are ready to fry) at least 1 to 2 days.

    3. In large skillet using about 1 to 2 inches of oil, fry in batches, about 1 to 2 minutes or until brown on both sides. Drain and sprinkle with powdered sugar.
