    • 2/3 cup Hershey's Cocoa
    • 1 1/2 cups milk
    • 3 cups sugar
    • 1/4 cup butter
    • 1/8 teaspoon salt
    • 1 teaspoon vanilla


    Instructions


    1. In a 3-quart saucepan, combine cocoa, sugar and salt.
    2. Add milk gradually, mixing thoroughly.
    3. Bring to a bubbly boil over high heat, stirring continuously.
    4. Reduce heat to medium and continue to boil the mixture, without stirring, until it reaches a temperatue of 232 degrees, or until a small amount of mixture forms a soft ball when dropped into cold water.
    5. Be sure that bulb of thermometer is not resting on bottom of saucepan.
    6. Remove saucepan from heat; add butter and vanilla to mixture.
    7. Do not stir.
    8. Allow fudge to cool at room temperature until it reaches 110 degrees.
    9. Beat by hand or with an electric mixer until fudge thickens and loses some of it's gloss.
    10. Quickly pour and spread fudge in a lightly buttered 8x8x2" pan.
    11. Cut into squares.
    12. Yields about 3 dozen squares.
