    • 2 cups granulated sugar
    • 1 cup light corn syrup
    • 1/2 cup water
    • 1 cup butter, cut in pieces
    • 2 cups raw spanish peanuts
    • 1 teaspoon baking soda


    Instructions


    1. Combine sugar,corn syrup and water in a heavy 3-quart saucepan.
    2. Cook over medium heat, stirring occasionally, until sugar is dissolved and mixture comes to a full boil (8 to 12 minutes).
    3. Add butter, continue cooking, stirring occasionally, until candy thermometer reaches 280 degrees, or a small amount of mixture dropped into ice water forms a hard but pliable strand (30 to 40 minutes).
    4. Stir in peanuts, continue cooking, stirring constantly, until candy thermometer reaches 305 degrees, or until a small amount of mixture dropped into ice water forms a hard brittle strand (15 to 17 minutes).
    5. Remove from heat, stir in baking soda.
    6. Immediately pour mixture onto 2 buttered baking sheets; spread evenly to about 1/4" thick.
    7. Cool completely.
    8. Break into pieces.
    9. Store in an airtight container.
    10. Makes 72 pieces (2-1/2 pounds)
