    Ham: One Pot Ham And Rice

    List of Ingredients


    • 3 cups diced left over ham (1/2 inch pieces)
    • 4 tablespoons unsalted butter or margarine
    • 1 medium onion, chopped
    • 2 cups long grain white rice
    • 2 cups chicken broth
    • 2 cups water
    • 1 medium sweet potato, peeled and diced (1/2 inch pieces)
    • 1/3 cup minced chives or chopped green onions
    • 1/4 cup grated parmesan cheese
    • black pepper for serving


    Instructions


    1. In a Dutch oven, cook ham over medium heat, stirring, until golden, about 4 minutes. Transfer to a plate. In the pan, melt 2 tablespoons butter. Add the onion and cook until softened, about 5 minutes.

    2. Add the rice, broth and water and bring to a simmer. Stir in the sweet potato and ham. Cover, reduce the heat to very low and steam for 18 minutes without lifting the lid.

    3. Remove the pan from the heat. Stir in the remaining 2 tablespoons butter, the chives and cheese. Spoon into bowls. Season with pepper and serve.
