    Rice: Arroz Con Queso

    List of Ingredients


    • 1 1/2 cups converted long grain rice
    • 1 (14 1/2) ounce can crushed tomatoes
    • 1 (15 ounce) can mexican style beans
    • 3 garlic cloves, minced
    • 1 onion finely chopped
    • 2 tablespoons vegetable oil
    • 1 cup cottage cheese
    • 1 (4 ounce) can diced green chiles, drained
    • 2 cups monterey jack cheese, grated


    Instructions


    1. Mix thoroughly all ingredients except 1 cup of the grated cheese.

    2. Cover and cook on low 6 to 9 hours.

    3. Just before serving, sprinkle with remaining grated cheese.

    4. Makes 6 to 8 servings.
