Rice: Arroz Con Queso

- 1 1/2 cups converted long grain rice
- 1 (14 1/2) ounce can crushed tomatoes
- 1 (15 ounce) can mexican style beans
- 3 garlic cloves, minced
- 1 onion finely chopped
- 2 tablespoons vegetable oil
- 1 cup cottage cheese
- 1 (4 ounce) can diced green chiles, drained
- 2 cups monterey jack cheese, grated
Instructions
- Mix thoroughly all ingredients except 1 cup of the grated cheese.
- Cover and cook on low 6 to 9 hours.
- Just before serving, sprinkle with remaining grated cheese.
- Makes 6 to 8 servings.
