Pork: Barbara's Pork Chop Dinner

- 1 tablespoon butter
- 1 tablespoon olive oil
- 6 loin, bone in pork chops
- 1 can cream of mushroom soup
- 1 (4 ounce) can mushroom pieces, chopped
- 1/4 cup dijon mustard
- 1/4 cup chicken broth
- 2 cloves garlic, minced
- 1/2 teaspoon basil
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 6 red potatoes, unpeeled, sliced thin
- 1 small onion, sliced
- Chopped parsley
Instructions
- Heat butter and oil in skillet. Brown chops on both sides; set aside.
- Combine soup, broth, garlic and spices in a large crockpot.
- Add potatoes and onions, stirring to coat.
- Place chops on top of potato mixture.
- Cover and cook on low 8 to 10 hours or on high 4 to 5 hours.
- Sprinkle with parsley.
