    Chicken: Country Captain Chicken And Rice

    List of Ingredients


    • 2 cups sliced shiitake mushrooms
    • 1 cup chopped onion
    • 1/2 cup chopped celery
    • 1 clove garlic minced
    • 1 pound boneless skinless chicken thighs trimmed of all fat and cut into bite-size pieces
    • 1 tablespoon flour
    • 1/4 cup fat free chicken broth
    • 1 1/2 teaspoons curry powder
    • 1 teaspoon salt
    • 1/4 teaspoon pepper
    • 1/4 teaspoon paprika
    • 3 cups canned crushed tomatoes
    • 1/4 cup golden raisins
    • 2 cups cooked brown rice


    Instructions


    1. Coat a large skillet with cooking spray.

    2. Add mushrooms, onions, celery and garlic and saute until vegetables are tender, about 5 minutes.

    3. Place vegetables in slow cooker; add chicken.

    4. In a cup, stir together flour and chicken broth until smooth. Add to slow cooker.

    5. Add curry powder, salt, pepper, paprika, curry powder, crushed tomatoes and raisins; stir to combine.

    6. Cover and cook on low 5 hours.

    7. To serve, spoon 1/2 cup of rice onto each of 4 plates. Top each with chicken and sauce and serve.

    8. Servings: 4 (2 1/2 cups chicken mixture and 1/2 cup rice) 7 points.
