    Vegetable: Potatoes Euphoria

    List of Ingredients


    • 2 garlic cloves, minced
    • 1 teaspoon salt
    • 1/4 teaspoon freshly ground black pepper
    • 8 medium boiling potatoes, scrubbed and sliced (about 2 pounds)
    • 1 (8 ounce) package cream cheese, cut into 1" cubes
    • 4 scallions, finely chopped


    Instructions


    1. In a small bowl, combine scallions and garlic

    2. In another small bowl, combine salt and pepper.

    3. In a well buttered 3 1/2 quart crockpot, layer 1/4 of the sliced potatoes. Sprinkle with about 1/4 teaspoon of the salt and pepper mixture and top with 1/3 of the cream cheese cubes and then 1/3 of the scallion mixture.

    4. Make a second layer of potatoes, sprinkle with about 1/4 teaspoon salt and pepper and top with half of the remaining cream cheese and scallion mixture.

    5. Repeat with a third layer of potaotes, sprinkle with another 1/4 teaspoon salt and pepper mixture and top with the remaining cream cheese and scallion mixture.

    6. Make a final layer of potatoes and sprinkle with remaining salt and pepper.

    7. Cover and cook on high 2 hours.

    8. Stir the potatoes to distribute the melting cream cheese.

    9. Cover and continue cooking until potatoes are very tender, about 1 hour longer.

    10. Stir the potatoes well to mash slightly and serve immediately.
