    Soup: Southwest Steak And Potato Soup

    List of Ingredients


    • 1 1/2 pounds boneless beef sirloin steak, cut 1" thick
    • 2 medium potatoes, cut into 1" pieces
    • 2 cups frozen cut green beans
    • 1 small onion, sliced and separated into rings
    • 1 (16 ounce) jar thick and chunky salsa
    • 1 (14 ounce) can beef broth
    • 1 teaspoons dried basil, crushed
    • 2 cloves garlic, minced
    • Shredded monterey jack or mexican blend cheese, optional


    Instructions


    1. Trim fat from meat, cut into 1" pieces; set aside.

    2. Using a 3 1/2 to 4 quart slow cooker, layer potatoes, green beans and onion. Top with meat.

    3. Combine salsa, beef broth, basil and garlic.

    4. Pour over mixture.

    5. Cover and cook on low 8 to 10 hours or on high for 4 to 5 hours.

    6. Sprinkle each servings with cheese, if desired.

    7. Yield: 6 servings
