    Rice: Tomato And Rice Casserole

    List of Ingredients


    • 4 tablespoons butter
    • 1/2 cup uncooked rice
    • 1 cup liquid from canned tomatoes
    • 1 3/4 cup canned tomatoes, drained
    • 2 teaspoons chopped parsley
    • 1 1/2 teaspoons salt
    • 1/2 teaspoon pepper
    • 4 tablespoons grated parmesan cheese
    • Chopped chives


    Instructions


    1. Saute rice in butter in skillet until rice is golden brown.

    2. Put in crockpot.

    3. Pour tomato liquid, tomatoes, parsley, salt and pepper into crockpot; mix well.

    4. Cover and cook on low 6 to 8 hours.

    5. Sprinkle with parmesan cheese and chopped chives before serving.

    6. Serves 4
