Country Lemon Squares

- Crust:
- 2 cups Martha White All-Purpose Flour
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1/2 cup butter or margarine, melted
- 1/2 cup finely chopped pecans
- Filling:
- 2 cups sugar
- 2 tablespoons Martha White All-Purpose Flour
- 1 tablespoon grated lemon peel, if desired
- 6 tablespoons fresh lemon juice
- 6 eggs, beaten
- Powdered sugar
Instructions
- Heat oven to 350 degrees. Grease 13x9 inch pan. In medium bowl, combine 2 cups flour, 1/4 cup sugar, salt and butter; mix until crumbly. Stir in pecans. Press mixture in bottom of greased pan. Bake at 350 degrees for 20 minutes or until light golden brown.
- Meanwhile, in another medium bowl, combine all filling ingredients except powdered sugar; beat until smooth.
- Remove partially baked crust from oven. Pour filling over crust. Return to oven; bake an additional 20 to 25 minutes or until filling is set. Cool 30 minutes or until completely cooled. Sprinkle with powdered sugar. Cut into squares.
