    • 2 1/4 cups all-purpose flour, divided
    • 2/3 cup confectioners' sugar
    • 1 teaspoon baking powder, divided
    • 1 cup butter, softened
    • 5 large eggs
    • 2 cups sugar
    • 1/2 cup fresh key lime juice


    Instructions


    1. Preheat oven to 350 degrees. Lightly grease a 13x9x2 inch baking dish.
    2. In a medium bowl, combine 2 cups flour, confectioners' sugar and 1/2 teaspoon baking powder. Cut in butter with pastry blender until mixture resembles coarse crumbs. Press mixture into prepared baking dish. Bake 20 to 25 minutes, or until lightly browned.
    3. In a medium bowl, combine eggs, sugar, lime juice, 1/4 cup flour and 1/2 teaspoon baking powder. Pour over hot crust. Bake 22 to 25 minutes or until lightly browned. I sifted a little powdered sugar on top of them.
    4. Yield: About 2 dozen bars
