Lemon Blueberry Cobbler

- 1/4 cup butter, softened
- 1/4 cup shortening
- 3/4 cup sugar
- 1/2 cup all-purpose flour
- 1/4 teaspoon baking powder
- 2 eggs
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- Filling:
- 1 1/2 teaspoons cornstarch
- 2 cups blueberries
- 1 1/2 teaspoons grated lemon peel
- Glaze:
- 1/2 cup powdered sugar
- 1/2 teaspoon lemon juice
- 1 tablespoon milk
Instructions
- In a mixing bowl, cream sugar and shortening. Add eggs and remaining ingredients. Spread 2/3 of batter in a greased 8x8 inch pan.
- For filling, combine 1/3 cup blueberries with cornstarch and lemon peel, crushing blueberries until mashed, Add remaining blueberries, mixing gently, Add blueberry mixture over batter. Drop remaining batter by rounded spoonfuls over filling. Bake at 350 degrees for 40 to 45 minutes or until golden brown. Drizzle glaze mix over top.
