    Lemon Glazed Gingerbread Bars

    List of Ingredients


    • 1 1/2 sticks of butter
    • 1/4 cup molasses
    • 1 cup sugar
    • 2 cups all-purpose flour
    • 1 teaspoon cinnamon
    • 1/2 teaspoon allspice
    • 1 teaspoon ginger
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 egg, beaten
    • 1/2 cup chopped pecans, optional
    • 2 cups confectioners' sugar
    • 2 tablespoons softened butter
    • Lemon juice


    Instructions


    1. Preheat oven to 350 degrees. Melt butter in a saucepan and stir in molasses and sugar. Combine flour with cinnamon, allspice, ginger, baking soda and salt. Stir into first mixture. Add beaten egg and mix well. Stir in nuts, if used. Grease or spray a jelly roll pan. (11x15 inch). Spread dough evenly inyo pan (wet hands work best for doing this). Bake 20 to 23 minutes, until a toothpick comes out clean. Set aside to cool slightly while you make the glaze.
    2. Sift the sugar and mix in the softened butter. Add fresh lemon juice a little at a time until you get the consistency you want. Spread evenly over the gingerbread while it is still warm. Let cool completely in the pan. Cut into bars.
