- Filling:
- 1 (14 ounce) can Eagle Brand sweetened condensed milk
- 3/4 cup lemon juice
- Flour Mix:
- 3/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- Butter Mix:
- 1/4 cup butter, salted, softened
- 1/2 cup firmly packed dark brown sugar
- 1/2 cup oatmeal, quick cooking, uncooked
Instructions
- Preheat oven to 350.
- In a bowl, whisk thoroughly condensed milk and lemon juice; set aside.
- In a seperate bowl, combine flour, baking powder and salt; set aside.
- In another bowl, cream butter and sugar together.
- Add oatmeal and flour mixture to creamed butter mixture. Mix thoroughly with pastry blender until crumbly.
- Spray an 8x8" baking pan; line with parchment paper.
- Spread crumb mixture into pan and pat down.
- Pour filling into pan.
- Bake 35 to 40 minutes or until brown around the edges.
- Cool in pan at room temperature 30 minutes.
- Cover and cool completely in refrigerator before cutting.
