    • Filling:
    • 1 (14 ounce) can Eagle Brand sweetened condensed milk
    • 3/4 cup lemon juice
    • Flour Mix:
    • 3/4 cup all-purpose flour
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon salt
    • Butter Mix:
    • 1/4 cup butter, salted, softened
    • 1/2 cup firmly packed dark brown sugar
    • 1/2 cup oatmeal, quick cooking, uncooked


    Instructions


    1. Preheat oven to 350.
    2. In a bowl, whisk thoroughly condensed milk and lemon juice; set aside.
    3. In a seperate bowl, combine flour, baking powder and salt; set aside.
    4. In another bowl, cream butter and sugar together.
    5. Add oatmeal and flour mixture to creamed butter mixture. Mix thoroughly with pastry blender until crumbly.
    6. Spray an 8x8" baking pan; line with parchment paper.
    7. Spread crumb mixture into pan and pat down.
    8. Pour filling into pan.
    9. Bake 35 to 40 minutes or until brown around the edges.
    10. Cool in pan at room temperature 30 minutes.
    11. Cover and cool completely in refrigerator before cutting.
