    List of Ingredients


    • 3/4 pound vanilla wafers, graham crackers or chocolate wafer cookies, crushed and divided
    • 1/3 cup butter or margarine, melted
    • 2 tablespoons unflavored gelatin
    • 2 tablespoons cold water
    • 6 eggs, separated
    • 2 cups sugar, divided
    • Juice and grated zest of 3 lemons
    • 1/4 teaspoon salt


    Instructions


    1. Reserve 1/2 cup wafer crumbs. To remaining wafer crumbs, add butter. Line sides and bottom of a 9 inch springform pan with crumb mixture.
    2. Soak gelatin in cold water. Beat egg yolks with 1 cup of sugar until light. Add lemon juice, lemon zest and gelatin mixture. Cook in top of a double boiler until thickened. Cool.
    3. Add salt to egg whites. Beat until stiff. Fold in remaining sugar and lemon mixture. Pour into prepared pan. Sprinkle reserved crumbs over top. Chill atleast 8 hours before serving.
